This summer just seems to last forever! Having a nice salad on a hot summer’s day, is just the way to stay in shape!
This Thai beef salad is a popular dish on the Karkloof Spa menu.
Thai Style Beef Salad
4 beef fillets (180 g each), pan-fried and roasted to preferred temperature
1 punnet baby sweet corn
1 punnet green beans
½ red onion
½ bunch coriander
Slice the carrots into thin strips. Quarter the baby sweet corn. Blanch and refresh the green beans in iced water. Thinly slice the red onion. Wash the coriander and salad leaves.
1 bunch coriander
1 bunch mint
2 cm fresh ginger
3 tbs fish sauce or to taste
50 ml sesame oil
Juice of two lemons
½ green chilli (optional)
Blend all the ingredients together in a high speed blender.
Toss all the salad ingredients together with the salad dressing. Divide between four plates and enjoy.
